tablespoons (2 sticks) butter, at room temperature
tsp. baking powder
To make chocolate cookies:
add 1 c. cocoa powder
Beat butter and sugar until fluffy. Add vanilla, baking powder and salt until combined. Add eggs and and blend. Add flour and blend, scraping down sides of the bowl. Divide dough in half and shape into discs. Wrap each in plastic wrap and refrigerate for at least an hour. Roll out cookie dough on a floured surface and cut into shapes. Transfer to a baking sheet with a spatula. Chill for 10 minutes. Bake cookies at 350 degrees for 12-15 minutes. Transfer to wire racks and let cool. Repeat with remaining dough. Decorate as preferred. **Keep dough refrigerated in between steps to keep the dough easy to work with.
