Ingredients
- 3 Cups grated zucchini
- 1 Cup Bisquick
- 1/2 Cup finely chopped yellow onion
- 1/2 Cup Parmesan cheese
- 2 Tbl chopped fresh parsley
- 1/2 tsp Lowery's seasoned salt
- 1/2 tsp oregano
- Dash of pepper
- 1 Clove garlic finely chopped
- 1/2 Cup canola oil
- 4 Eggs beaten

Step 1
Preheat oven to 350 degrees. Combine all ingredients in a bowl and mix well. Bake for 25 minutes and frittata is slightly brown on top. Cool to warm before cutting into squares. Note: My grandmother made this portion in a 9x13 glass baking dish. I like my frittata slightly thicker so I make this portion in a smaller baking dish. If I use the 9x13 baking dish, I double the recipe.
