Ingredients
- 3 Tbsp Olive Oil
- 3 Medium Zucchini cut into 1/2" Slices
- 2 Large Tomatoes peeled and chopped
- 1 Large Onion chopped
- 1 Green Pepper Cut into Strips
- 1/4 Cup Minced Parsley
- 1 Tbsp minced Fresh Basil (dried - 1 tsp)
- 1/2 tsp Salt
- 1/4 tsp Pepper

Preparation
Step 1
In large Dutch Oven, saute all ingredients on high for 5 minutes.
Cover, Simmer for 15 minutes or until Vegetables are tender.
