Crispy Oven-Fried Chicken Breasts

Ingredients

  • 2 large chicken breasts (split)
  • 1 1/2 cups Cornflakes, crumbled
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 eggs, beaten
  • 1/2 cup cooking oil

Preparation

Step 1

Preheat oven to 350 degrees.

Combine Cornflake crumbs with garlic powder and paprika. Dip the breast pieces in the egg and then roll them in the seasoned Cornflake crumbs.

Line a shallow baking dish with aluminum foil and place the chicken breasts on foil and bake for 10 minutes.

Meanwhile, heat the oil in a frying pan. When very hot, drizzle the oil over chicken. Bake uncovered for about 1 hour. Serves 4.

Needs more seasoning. Salt/pepper...something to give it more excitement too!

I gave it a 4 but it's still cooking. I did add garlic salt, chili powder and basil to Panko crumbs. I did not have enough oil so we'll see. If it's anything other than a 4 I'll reply. I'm hungry!!!

Cooking now, but I tweaked it quite a bit and crushed up the remains of a bag of Tostitos Hint of Lime and used as the breading.. We'll see!

I added Louisiana fish fry seasoning to it that spiced it up awesome!

First time cooking with cornflakes, needed more seasoning. Today cooked after overnight marinading in chicken seasoning and ranch dressing. Very good!

I gave it a 5 because it came out perfect. I did season it to my liking though and I believe this will be my new recipe for oven fried chicken. Thanks.

It gets better if you use honey bunches of oats crunched up and, instead of paprika, try some Montreal seasoning, chicken-style works well!
