Cheesy Rice Patties

“You’ll love these crispy-on-the-outside and cheesy-on-the-inside rice patties. For a cheap meal, Grandma would serve them as a main dish. ”
Ingredients
- 2 cups cooked white rice
- 1 egg
- 1/2 cup grated Swiss cheese
- 1/4 cup grated carrot
- 2 tablespoons all-purpose flour
- 1 tablespoon chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons vegetable oil
- 2 cups applesauce (optional)
- 1/2 cup sour cream (optional)
Preparation
Step 1
Combine the rice with the egg, cheese, carrot, flour, parsley, salt and pepper. Mix until incorporated and set aside for 5 minutes.
Heat the oil in a large, heavy skillet over medium-high heat.
Use a 1/3 measuring cup to equally portion each patty. Pour the portioned rice mixture carefully into the oil and flatten into patties with the side of the cup. Cook until golden brown and crispy, turn and cook the other side. Drain on paper towels.
Continue in batches of 3–4 until all of the patties are cooked. Serve with a dollop of sour cream on top with applesauce on the side, if desired.

Grandma's Secret Tip:
Have a lid handy— rice expands when frying & tends to make the oil spatter. Prop the lid halfway onto the pan to let the steam escape, but still allow the patties to brown.
