Ingredients
- 1 tbsp olive oil
- 1/2 cup apple sauce
- 1/4 cup brown sugar
- 3 eggs
- 1 small can crushed pineapple, drained
- 2 tsp vanilla
- 2 cups flour or if using rice flour 1 1/2 cups (make up difference with oatmeal)
- 1/2 cup oatmeal, more if using rice flour
- 1 tsp cinnamon
- 2 tsp baking soda
- 1/8 tsp salt
- 1/4 cup shredded coconut
- 1 1/2 cup finely shredded carrots
- 1/4 cup walnuts
- 1/2 cup raisins
- 1/4 cup chopped dates

Preparation
Step 1
Add ingredients from first to last, mixing by hand. Spoon into muffin tins. Bake 16-20 minutes at 350F. Do not overbake.
