Ingredients

  • 1 tbsp olive oil
  • 1/2 cup apple sauce
  • 1/4 cup brown sugar
  • 3 eggs
  • 1 small can crushed pineapple, drained
  • 2 tsp vanilla
  • 2 cups flour or if using rice flour 1 1/2 cups (make up difference with oatmeal)
  • 1/2 cup oatmeal, more if using rice flour
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup shredded coconut
  • 1 1/2 cup finely shredded carrots
  • 1/4 cup walnuts
  • 1/2 cup raisins
  • 1/4 cup chopped dates

Preparation

Step 1

Add ingredients from first to last, mixing by hand. Spoon into muffin tins. Bake 16-20 minutes at 350F. Do not overbake.
