Jalepeno popper corn muffins

Ingredients

  • 1

    cup cornmeal

  • 1

    cup all purpose flour

  • 1

    tblsp bkg powder

  • 1

    tsp salt

  • 2

    eggs

  • 3

    tblsp honey

  • 1

    cup buttermilk

  • 6

    tblsp melted butter

  • 1

    cup cheese, grated, I like a combo of cheddar and monterey jack

  • 3

    oz cream cheese

  • 12

    rings of pickled jalepeno

Directions

Mix your dry ingredients. Then mix the wet ingredients, add together and then add the cheese. Put into 12 muffin cups. Now cut your cream cheese into 12 cubes and press into the center of each muffin, adding ane ring on top. Press an additional tblsp of grated cheese on top. Bake @ 375* for 20-25 minutes. Serve with jalepeno jelly.
