Shrimp with Corn & Basil

Ingredients
- 1 b. cleaned shrimp
- 2 tbs Olive Oil
- S&P
- Crushed red chili flakes (to taste)
- 2 ears corn, stripped
- 1/2 bunch basil
- 1 pint cherry tomatoes, halved
- 2 limes (zest & juice)
- 2 garlic cloves, sliced
- 2 tbs butter

Preparation
Step 1
Heat oil in skillet over medium-high heat. Season shrimp with S&P & add to skillet. Sear on both sides. Add garlic & chili flakes. Add a pinch of salt & cook until softened. Add corn & tomatoes and cook for 2-3 minutes. Add lime zest & juice and a splash of water, cook for another 1-2 minutes. Remove pan from heat, add basil, butter & last drizzle of olive oil.
