Ingredients
- 1 cup mashed potatoes
- 1/2 cup flour
- 2 Tablespoons baking powder
- 2 eggs, beaten
- 1/2 teaspoon salt
- Pepper to taste
- 1/2 cup shredded Cheddar cheese (optional)

Combine the ingredients. Form into pancake size patties. Fry on both sides until golden brown.
