Ingredients

  • 3 T flour
  • 1 1/2 tsp salt, divided
  • 3/4 tsp pepper, divided
  • 4 lbs chicken pieces
  • 3 T olive oil
  • 1 red onion, sliced
  • 1/4 C sliced shallots
  • 2 cloves garlic, minced
  • 8 oz mushrooms, quartered
  • 3/4 C drained pitted green olives halved, 4 oz
  • 1/2 C dry red wine
  • 2 T tomato paste
  • 1 can chicken broth
  • 3 carrots, cut diagonally 1/4 " thick about 2 cups
  • 1/2 tsp dried thyme
  • 1 lb small red potatoes, quartered
  • 2 T chopped fresh parsley, optional

Preparation

Step 1

Combine flour, 3/4 tsp salt and 1/2 tsp pepper. Add chicken; toss to coat, shaking off excess
In pot heat oil over high heat.
Cook chicken, turning once, until lightly browned, 2-3 minutes per side
Remove chicken
Reduce heat to medium low, add onions, shallots and garlic, cook 2 minutes
Add mushrooms and olives,
Cook until softened, 5 minutes
Add wine and tomato paste; cook 2 minute
Add broth, carrots, thyme and remaining salt and pepper
Bring to boil
Return chicken to pot; cover. Reduce heat to low cook 5 minutes
Add potatoes; cover, cook until chicken is no longer pink near bone and potatoes are tender, 25 minutes
