Breads: Pat Ytuarte's Bread or Rolls

Ingredients

  • 3 T of yeast
  • 4 cups of warm water
  • 1/4 cup oil
  • 1/4 cup brown sugar
  • salt
  • 5 cups white flour
  • 1 cup whole wheat
  • 1 cup rye (cracked wheat or rye)
  • May add bran, bran flakes and a handful of wheat germ
  • Sweet Rolls
  • Add
  • Double amount of sugar or honey
  • 2 eggs
  • 1 T additional yeast

Preparation

Step 1

Pour yeast into water and set aside.
In a large bowl pour oil and stir in sugar.
Pour in yeast mixture and stir.
Add salt.
Mix in all flour.
Bake at 350 degrees for 35 minutes for one loaf.
Bake at 350 degrees for 25 minutes for rolls.
Pour oil over well mixed flour mixture (Stiff and sticky - oil makes mixture manageable)
Cover with waxed paper.
Let rise until double in bulk (1-2 hours)
Punch down. Knead a few times to hold together.
For a loaf, divide into 3 equal parts.
For rolls, divide into 24 equal parts.
Roll a la Pat.
Place in oiled pan and cover.
Let rise about 1 hour then roll out.
For sculpture, play around.

Sweet Rolls ???
Decrease salt, by half
For bread itself, may add:
2 cups zucchini (grated), beans, peas, left-overs, potatoes or potato water, rice,
If bread is crumbly, too much sugar
Cannot eliminate all salt! It will not rise properly
