Italian Chicken Chardonnay (Slow Cooker)

Ingredients

  • 2 t paprika
  • 1 t salt
  • 1 t pepper
  • 1/4 t cayenne pepper
  • 3 lbs bone-in chicken breast halves, skin removed
  • 1/2 lb baby portobello mushroom, quartered
  • 1 med sweet red pepper, chopped
  • 1 med onion, chopped
  • 14 oz water-packed artichoke hearts, rinsed & drained
  • 1 1/2 c Chardonnay
  • 6 oz tomato paste
  • 3 garlic cloves, minced
  • 2 T minced fresh thyme or 2 t dried thyme
  • 1/4 c minced fresh parsley
  • Hot cooked pasta (optional)
  • Shredded Romano cheese

Preparation

Step 1

Combine paprika, salt, pepper & cayenne; sprinkle over chicken. Place chicken mushrooms, red pepper, onion & artichokes in 5 qt slow cooker.

In sm bowl combine Chardonnay, tomato paste, garlic & thyme; pour over veggies. Cover & cook on low 5-6 hrs until,chicken is tender. Stir in parsley. Serve with pasta or other side dish; sprinkle with cheese.
