  • Juice of 2 lemons
  • 2 1/2 c dry white wine
  • 1/2 t salt
  • 4 lg boneless skinless chicken breasts
  • 6 oz plain goat cheese
  • Sun dried tomatoes to taste
  • 16 basil leaves or more
  • 2 T EVOO
  • 2 T butter
  • Seasoning for chicken breasts (such as Emeril's southwest seasoning)



Step 1

Bring wine & lemon juice to boil. Add salt & simmer 40 min until reduced by 1/2. Soak basil in oil so it does not dry out in oven.

Preheat oven to 400. Season chicken lightly with southwest or other seasoning. Melt butter & fry chicken in very hot skillet 5-7 min each side. Arrange chicken in oven safe pan or casserole dish. Deglaze skillet with white wine lemon sauce. Strain sauce while pouring over chicken.

Put two 1/2 in slices of goat cheese on top of the chicken. Add tomatoes & top with basil. Spoon sauce over basil. Bake for 10 min then broil for 2 min. Serve & top with sauce.
