Ingredients
- Microwave until melted:
- 3 C. Rolled Oats (Not instant)
- 3/4 C. Chopped Pecans (not roasted)
- 3/4 C. Sliced Almonds (not slivered or roasted)
- 3/4 C. fine shredded Unsweetened Coconut
- 1/2 C. Honey
- 1/4 C. Coconut Oil
- Add to wet ingredients:
- 1 T. Vanilla
- 1/2 t. Salt
- Drizzle the combined wet ingredients over the oat and nut mixture - coat and mix well.
Preparation
Step 1
Place granola mixture on cookie sheet keeping it away from the edges to prevent over-browning. BAKE 325° for 7 minutes. Take out and turn over and return to oven. Bake 7 more minutes until a nice golden brown color.
While granola is baking, chop:
1/2 C. dried Peaches
1/2 C. dried cranberries or raisins, etc.
Add the dried fruits to the granola when it's out of the oven. Let cool completely and store in air-tight container
