Ingredients

  • 2 C. flour (lightly spooned into measuring cup)
  • 1 C. packed brown sugar
  • 1 T. baking powder
  • 1 t. cinnamon
  • 1/4 t. salt
  • 1/4 t. baking soda
  • 1/4 t. nutmeg
  • 1/8 t. ground ginger OR ground cloves
  • 1 C. canned pumpkin
  • 1/2 C. milk
  • 2 eggs
  • 1/3 C. shortening
  • 1/2 C. walnuts, chopped
  • 1/2 C. raisins

Preparation

Step 1

Oven 350. Grease & flour 9x5x3 loaf pan.

1. In large bowl, combine 1 cup of the flour, brown sugar, baking powder, cinnamon, salt, baking soda, nutmeg & ginger/cloves. Add pumpkin, milk, eggs & shortening.

2. Beat with electric mixer on low speed until blended, then high speed for 2 minutes. Add remaining flour, blend well. Stir in nuts & raisins.

3. Pour batter into prepared loaf pan. Bale 60-65 ,minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes in pan on a wire rack. Remove from pan & cool thoroughly on wire rack. Wrap & store overnight before slicing.

Yield: 1 loaf (approx. 18 slices)
