Roasted Salmon with Pomegranate-Avocado Salsa

Ingredients

  • 2 t ground coriander
  • 2 t sugar
  • 1 t salt
  • Seeds of one pomegranate
  • 1/2 C thinly sliced green onion
  • 2 t finely chopped jalapeno
  • 1 clove finely chopped garlic
  • 2 avocados, cut in 1/2" dice
  • 1 head of romaine
  • 4 slamon filets
  • 1 wedged lime
  • 3 T lime juice

Preparation

Step 1

Mix coriander, sugar & salt; reserve
Up to 4 hrs before serving, mix pomegranate seeds, onion, lime juice, jalapeno & garlic. Gently fold in avocado.
Separate romaine leaves after washing, slice leaves into thin shreds.
Rub generous t. of reserved seasoning over salmon & grill.
While salmon cooks, mound 1/4 of romaine on each plate. Top with 1/2 C avocado salsa. Top with cooked salmon & serve with 2 lime wedges.
