Easy Sausage Stuffed Mushrooms

  • tablespoon fresh thyme finely minced

Step 1

Preheat oven to 425.
Remove the casings from the sausage, if you purchased sausage that is made with casings. Place sausage in a frying pan, using a wooden spatula break the sausage up into small pieces. Cook over medium heat for 5 minutes, stirring often to continue breaking up.
While the sausage is cooking, clean the mushrooms with a mushroom brush or a paper towel. Do not use water; the mushrooms will fall apart. Using a small spoon, lightly scoop out some of the mushroom flesh to create a pocket for the filling. Mince the mushroom flesh into small pieces. Place the mushrooms cups onto a baking sheet.
Add the minced mushroom flesh, shallot, garlic and thyme to the sausage mixture. Stir. Remove from the heat. Stuff each of the mushrooms.
Using a pastry brush lightly brush each of the mushrooms with a little olive oil. Grate fresh Parmesan cheese over the mushrooms. Bake for 20 – 25 minutes until the cheese is golden and the mushrooms are soft, without falling apart.
Serve. Eat.
