  • Filling: 4 apples (pink lady) peeled and diced
  • 1 c. gran. sugar (divided)
  • 1 1/2 tsp. cinnamon (divided)
  • 1/2 tsp. nutmeg
  • 2 pkgs. cream cheese, softened
  • 2 large eggs
  • 1 c. all purpose flour
  • 3/4 c. packed brown sugar
  • 1/2 c. old-fashioned oats
  • 1/2 tsp. salt
  • 1/2 c. softened butter
  • 1/2 c. chopped walnuts
  • Caramel topping
  • Crust: 1 c. butter
  • 2/3 c. packed brown sugar
  • 2 c. all-purpose flour
  • 1/2 tsp. salt

Step 1

Preheat oven to 350. Line a 13x9 baking pan with parchment paper, with excess over edges of pan. Prepare crust: Beat butter and brown sugar until fluffy. Add flour and salt, beating until combined. Press into bottom of pan. Bake for 20 min. Or until lightly browned. Cool. For filling: stir apples, sugar, 1 tsp. cinnamon and nutmeg. Let set for 30 minutes. Beat together cream cheese, eggs, and 1/2 c. sugar until smooth. Pour over cooled crust and spread drained apple mixture over cream cheese. Whisk together flour, brown sugar, oats, salt and 1/2 tsp. cinnamon. With a fork stir in butter and pecans until it resembles coarse crumbs. Sprinkle over apples. Bake for 40 minutes. Cool in pan. Then refrigerate. Cut into bars and drizzle caramel topping before serving.
