Pumpkin Cheesecake

  • Crust:
  • 1 1/2 c. graham cracker crumbs
  • 5 Tbsp. butter, melted
  • 1 Tbsp. sugar
  • Filling:
  • 3 - 8 oz. pkgs. cream cheese, softened
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1 c. canned pumpkin
  • 3/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • pinch of cloves
  • pinch of ginger
  • 3 eggs
  • Topping:
  • whipped cream



Step 1

Mix crust ingredients together. Press onto bottom of 8" springform pan. Combine cream cheese, sugar and vanilla in large bowl and mix until smooth and creamy. Add pumpkin and spices; mix well. Add eggs and mix just until combined well. Do not overbeat eggs. Pour mixture over crust and bake at 350 degrees 55-60 minutes or until set in center. Let cool at room temperature for 15 minutes. Slide knife around springform ring and then remove. Cool completely. Serve with whipped cream.
