Chicken Marsala with Angel Hair Pasta (Quick)

  • 8 oz uncooked whole wheat or multigrain angel hair pasta
  • 4 boneless skinless chicken breast halves
  • 1/4 c all purpose flour
  • 1 t lemon pepper seasoning
  • 1/2 t salt
  • 2 T EVOO
  • 4 c sliced fresh mushrooms
  • 1 garlic clove, minced
  • 1 c dry Marsala wine



Step 1

Cook pasta according to pkg directions. Pound chicken with meat mallet to 1/4 in thickness. In lg resemble plastic bag mix flour, lemon pepper & salt. Add chicken one piece at a time; close bag & shake to coat.

In lg skillet heat 1 T oil over med heat; Add chicken. Cook 4-5 min on each side until no longer pink. Remove; keep warm.

In same skillet heat remaining oil over med high heat. Add mushrooms; cook & stir until tender. Add garlic; cook 1 min longer. Add wine; bring to boil. Cook 5-6 min until liquid is reduced by 1/2, stirring to loosen browned bits from pan. Return chicken to pan turning to coat with sauce; heat through.

Drain pasta; serve with chicken mixture.
