Shrimp and Grits Casserole

Ingredients

  • 4 c chicken broth
  • 1/2 tsp salt
  • 1 c regular grits
  • 1 c cheedar cheese
  • 1 c monterey jack cheese w/peppers
  • 2 tbsp butter
  • 6 green onions, chopped
  • 1 green bell pepper, chopped
  • 1 garlic clove, minced
  • 1 lb small shrimp, peeled and cooked
  • 1 10 oz can diced tomatoes and green chilies, drained
  • 1/4 tsp salt and pepper

Preparation

Step 1

Preheat oven to 350. Bring 4 c chicken broth and 1/2 tsp salt to a boil in large saucepan, stir in grits. Cover, reduce heat and simmer 20 mins.

Stir together grits, 3/4 cheddar cheese and monterey jack cheese.

Melt butter in large skillet and add green onions, bell pepper and garlic and saute until tender.

Stir together green onion mixture, grits mixture, shrimp and next 3 ingredients. Pour into baking dish sprayed with cooking spray. Sprinkle top with remaining cheddar cheese. Bake 30-45 mins.
