Mini chcken and broccoli pies

  • Chicken-broccoli mixture
  • 1 T veg oil
  • 1 pd boneless skinless chicken breasts cut in 1 in pieces
  • 1 medium onion chopped (1/2 c)
  • 1 c Green Giant frozen chopped broccoli thawed and drained
  • salt and pepper
  • 1 c shredded cheddar cheese
  • Baking mixture
  • 1/2 c Original Bisquick
  • 1/2 c milk
  • 2 eggs



Step 1

Heat oven to 375
spray 12 regular size muffin cups with cooking spray
in a 10 inch skillet heat oil over med hi heat. Cook chicken in oil 5-7 mins stirring occasionally until chicken is no longer pink in center-add onion and cook 3 mins-add broccoli salt and pepper and stir occasionally until mixture is heated through-cool 5 mins and stir in cheese
In a medium bowl stir baking mixture ingredients with whisk or fork until well blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 c chicken broccoli mixture. Spoon 1 tablespoon baking mixture onto chicken broccoli in each muffin cup
Bake about 30 minutes until tops are golden brown-cool 5 mins
loosen sides of muffins with thin knife and remove to rack to cool 10 more mins-and serve
