Sunday Brunch Potatoes

“When a recipe calls for a small chopped onion, you will get more for your money using a large one. Chop the whole onion, then use half in the recipe and freeze the other half for later use.”

Ingredients

  • 1/2 pound bacon, finely chopped
  • 1 small onion, chopped
  • 5 large russet potatoes, peeled, grated
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 eggs, beaten

Preparation

Step 1

Preheat oven to 400°F. Grease a 9-inch square baking dish. Cook bacon and onion in a large skillet over medium heat, stirring frequently, until onion is tender, about 5 minutes.


Combine bacon, onion, potatoes, salt, pepper and eggs in a large bowl; mix well.


Pour potato mixture into prepared dish. Bake for 15 minutes.


Reduce oven temperature to 375°F. Bake potatoes until golden brown, about 40 minutes. Cut into 6 pieces to serve.
