Do ahead muffins- Mix dry ingredients the night before and set aside. Mix eggs and milk; cover and refrigerate. In the morning combine dry and liquid ingredients. Spoon batter into muffin cups and bake.

Ingredients

  • Basic Breakfast Muffins
  • 2 cups sugar
  • 1 Tbs baking powder
  • 1/4 cup sugar
  • 3/4 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup canola oil
  • 1 1/2 tsp vanilla extract

Preparation

Step 1

1. Preheat oven to 400 degrees. Line muffin cups w/ paper liners
2. In a medium bowl, combine flour, baking powder, sugar and salt. In a large bowl, beat eggs, milk, oil and vanilla for 1 minute on medium. Add flour mixture. Beat just until no streaks of flour remain- DO NOT overmix!!
3. Spoon batter into muffin cups. Bake for 20 mins or until tops of muffins spring back lightly. Transfer muffins to a rack to cool slightly.

Cinnamon Sugar
3 Tbs sugar
1 tsp cinnamon
Mix together cinnamon and sugar and sprinkle muffin tops before baking

Blueberry Streusel
1 cup blueberries
Streusel topping
1/4 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
2 Tbs cold butter, cubed
Stir blueberries into batter. Combine streusel topping and top muffins before baking

Oatmeal Craisins
1 cup craisins
4 Tbs rolled oats
Stir craisins into batter and sprinkle tops w/ rolled oats

Raspberry Almond
4 Tbs seedless raspberry jam
4 Tbs slivered almonds
Fill muffin cups a 1/3 of the way w/ batter and spoon 1 tsp jam into each, making sure not to touch edges of pan. Top w/ more batter. Sprinkle w/ silvered almonds before baking

Banana Chocolate Chip
1 mashed banana
1/2 cup chocolate chips
Stir mashed banana and chocolate chips into batter

Lemon Poppy Seed
1 tsp lemon extract
2 Tbs poppy seeds
Substitute lemon extract for vanilla and add poppy seeds to batter

Apple Pie
1 tsp cinnamon
1/2 tsp nutmeg
1/2-1 cup chopped apple
Mix cinnamon, nutmeg and apples to batter

Pineapple Coconut
1/2 cup shredded coconut plus 4 Tbs shredded coconut
1/4 cup drained chopped pineapple
Stir in 1/2 cup coconut and pineapple into batter. Sprinkle each muffin w/ 1 tsp coconut
