Ingredients
- 1 (14 1/2-oz) can stewed tomatoes, undrained
- 1/2 cup water
- 1 (15 1/2 oz) can black beans, rinsed
- 1 cup uncooked instant brown rice
- 1 cup corn
- 1/2 tsp cumin
- 1/4 tsp chili powder
- Salt, to taste
- Pepper, to taste
Preparation
Step 1
In a large pan, combine stewed tomatoes, water, black beans, brown rice, corn, cumin and chili powder. Simmer for 10 minutes or until liquid is absorbed. Add salt and pepper to taste.
