Southwestern Special

Ingredients

  • 1 (14 1/2-oz) can stewed tomatoes, undrained
  • 1/2 cup water
  • 1 (15 1/2 oz) can black beans, rinsed
  • 1 cup uncooked instant brown rice
  • 1 cup corn
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • Salt, to taste
  • Pepper, to taste

Preparation

Step 1

In a large pan, combine stewed tomatoes, water, black beans, brown rice, corn, cumin and chili powder. Simmer for 10 minutes or until liquid is absorbed. Add salt and pepper to taste.
