Ingredients
- 2 tablespoons olive oil
- 1 medium onion diced
- 1 red bell pepper, cored, seeded and diced
- 1 yellow bell pepper, cored, seeded and diced
- 1 green bell pepper, cored, seeded and diced
- 2 plum tomatoes, cored, seeded and diced
- 1 1/2 Serrano chiles, seeded and minced
- 2 teaspoons salt, plus more to taste
- 1 teaspoon freshly ground pepper, plus more to taste
- 3 cups fish stock or bottled clam juice
- 1 14 1/2 ounce can unsweetened coconut milk
- 6 scallions, white and light green parts only, sliced into thin rounds
- 3/4 pound sea scallops
- 3/4 pound monkfish fillets, cut into 1-inch cubes
- 3/4 pound shrimp, preferably rock shrimp, shelled and deveined
- Juice of 1 lime
- 2 tablespoons dende oil (optional)
- 1/3 cup loosely packed chopped fresh cilantro
