Debbie's Stuffed Cheese Potatoes

Ingredients

  • 12 large baking potatoes
  • 4 8-ounce Packages of grated Colby and Monterey Jack Cheese Mixture
  • 4 Sticks Butter
  • 3/4 Cup Bacon Bits
  • 3/4 Cup Milk
  • Salt and Pepper to Taste

Preparation

Step 1

Wrap potatoes in foil and use a knife to puncture a couple of holes in the potatoes. Cook at 375 degrees until done? Unwrap potatoes and cut off the very top (save tops for potato skins later). Scoop out potatoes from the skin and save the skin. In a large bowl combine all ingredients except for one package of cheese. Make sure the potatoes are still hot. Mash with a hand held masher only until cheese and butter melt. It needs to stay lumpy so it will taste more like a baked potatoes than creamed potatoes. Put mixture back into potato shells. Sprinkle the rest of the cheese on top and put into oven or microwave until potatoes are hot and cheese is melted. These can be prepared two days before hand and stored in the fridge until ready to heat and serve.
