Bermuda Johnny Bread is a kind of Caribbean corn bread. It tastes best cooked in a skillet, rather than baked in the oven.

Ingredients

  • 1/2 cup milk
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 2 Tablespoons butter
  • 1 1/2 cup flour
  • 1 egg
  • 1/4 teaspoon Salt

Preparation

Step 1

Mix sugar, flour, salt, and baking powder. Add egg and milk and mix. Melt butter in frying pan. Spoon a third of the batter into the pan. Fry on low heat until brown. Turn and brown the other side. Repeat twice with the remaining batter. Split bread in half and serve with plenty of butter and jam.
