Ingredients

  • 1 Light English muffin, split, lightly toasted
  • 1 tbsp. light blue cheese dressing, about 25 calories per tbsp.
  • 1/2 cup Arugula, shredded
  • 2 slices tomato
  • 2 slices red onion
  • 1 slice cooked turkey bacon
  • 1/8 tsp. Black pepper
  • 3 ounces thinly sliced roast beef

Step 1

Plate toasted muffin halves and spread evenly with dressing. Top bottom half with arugula, tomato and onion.

Place roast beef in a skillet sprayed with non-stick spray, cook until warmed and browned about 1-2 minutes. Roughly chop the roast beef. Place over veggies on bottom muffin. Add bacon, top with muffin top.
