Ingredients
- 1 Light English muffin, split, lightly toasted
- 1 tbsp. light blue cheese dressing, about 25 calories per tbsp.
- 1/2 cup Arugula, shredded
- 2 slices tomato
- 2 slices red onion
- 1 slice cooked turkey bacon
- 1/8 tsp. Black pepper
- 3 ounces thinly sliced roast beef

Preparation
Step 1
Plate toasted muffin halves and spread evenly with dressing. Top bottom half with arugula, tomato and onion.
Place roast beef in a skillet sprayed with non-stick spray, cook until warmed and browned about 1-2 minutes. Roughly chop the roast beef. Place over veggies on bottom muffin. Add bacon, top with muffin top.
