Cranberry Oatmeal Cookies

I substitute whole white wheat flour for the all-purpose. I also substitute coconut oil for the butter at a little less than a 1:1 ratio. I have also substituted pure orange extract for the grated orange peel. The only thing I haven't tried yet that I want to is substituting honey for the sugar!

Ingredients

  • In a mixing bowl, combine:
  • 6 tbsp butter, softened
  • 3/4 cup firmly packed brown sugar
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 tsp finely grated orange peel
  • In a large bowl, whisk together and add to above ingredients:
  • 1 1/4 cups old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Mix in:
  • 3/4 cup dried cranberries

Preparation

Step 1

Line cookie sheets with parchment paper. Bake at 350 degrees for 8-9 minutes. Let cool on cookie sheet for 1 minute then transfer to a cooling rack.
