Gooey Chocolate Peanut Butter Cupcakes

Ingredients

  • Cupcakes:
  • 1 cup unsalted butter
  • 4 oz both milk and dark chocolate chips
  • 5 eggs
  • 1/2 cup sugar
  • 4 tsp flour
  • Pinch of salt
  • Sauce:
  • 1/4 cup sweetened condensed milk
  • 2 Tbs creamy peanut butter
  • 1 1/2 Tbs light corn syrup
  • 1 tsp vanilla extract

Preparation

Step 1

Cupcakes:
1. Microwave butter and chocolate together just until butter melts. Stir by hand to melt chocolate
2. In a separate bowl, beat eggs, sugar and salt. Mix in chocolate mix till smooth.
3. Beat in Flour. Cover and refrigerate for at least two hours.
4. Line cupcake pan with paper liners. Spray papers with non stick cooking spray. Fill each cup 2/3 full with batter.
5. Bake until batter puffs but center is not set; approx 8 min. Once cooled, remove papers and transfer to dessert plates.

Sauce:
1. Mix all sauce ingredients in a saucepan over low heat until smooth. Using spoon, carefully drizzle into the center of each cupcake or across the top.
