Ingredients
- 1 lb parsnips, peeled and cut into 1-in pieces
- 2 lbs sweet potatoes, peeled and cut into 1-in pieces
- 1/2 c 2% milk
- 1/4 c packed brown sugar
- 2 T unsalted butter
- 3/4 t salt
- 1/4 t ground allspice
Preparation
Step 1
Combine parsnips and sweet potatoes in a med pot; cover with 1 in of cold water. Bring to a boil, then reduce heat to med and simmer for 10-15 mins, or until vegetables are tender and parsnips have lost their bitterness.
Drain cooked vegetables and immediately return to pot over low heat. Mash with milk, brown sugar, butter, salt and allspice.
