BBQ Butter Tarts

  • 1 cup raisins
  • 1/2 c currants
  • 2 eggs
  • 1-1/2 c brown sugar
  • 1-1/2 c corn syrup
  • 3 T melted butter
  • 2 t vinegar
  • pinch of salt
  • 1/2 t vanilla extract



Step 1

Preheat barbeque to 350 degrees F. In a pot of boiling water plump raisins and currants for 5 minutes. Drain on paper towels.

In a bowl, beat together eggs. Add brown sugar, corn syrup, melted butter and beat again.

Then add the raisin & currant mixture, vinegar, salt and vanilla extract and mix vigorously.

Put cupcake papers in muffin pan. Place 4 inch circles of uncooked pie crust into the pans. Fill the shells 2/3 full and bake uuntil the pastry is light brown, about 20 minutes.
