Smoked Corn Salsa

Ingredients

  • 4 ears of corn, husks removed, smoked for 30 minutes using apple wood chips, then kernels removed from the cob
  • 1 red bell pepper, finely diced
  • 1 green bell pepper, finely diced
  • 1 small red onion, finely diced
  • 2 medium tomatoes, diced
  • 1 tablespoon cilantro, chopped
  • 1 jalapeño, finely diced
  • 1 teaspoon salt
  • 1/2 teaspoon black ground pepper
  • 1 lime, juiced
  • 1/2 teaspoon cumin powder

Preparation

Mix ingredients for salsa one hour before using.
