Asparagus & Zucchini Salad

Ingredients

  • 1 lb of baby asparagus
  • 2-3 zucchini
  • 1/2 / cup toasted pine nuts
  • Parmasean cheese, shaved

Step 1

Chop asparagus into 1 to 1 1/2 inch strips.

Lightly saute in olive oil for approximately 3 minutes. Take off heat and let cool.

Using a fine setting on the mandolin, shave zucchini down to where it is near the seeds. (it should look like thin slices of pasta. If you don't have a mandolin, use a vegetable peeler;it will just give it a different look.

Toast the pine nuts.

Mix asparagus & zucchini strips together.

Toss with a lemon & olive oil vinegarette dressing

Garnish with pine nuts & shaved cheese
