Ingredients

  • 2 lb assorted baby potatoes, halved lengthwise
  • 1 cup slice shallots
  • 2 tbs olive oil
  • 1 1/2 tbs coarse grain Dijon mustard
  • 1 tbs chopped fresh thyme, plus sprigs for garnish
  • 1/2 tsp coarse sea salt
  • 1/2 tsp pepper

Preparation

Step 1

1. Heat oven to 400 degrees. Coat large rimmed baking sheet with cooking spray. Combine potatoes and shallots in large bowl. Whisk all remaining ingredients in small bowl, except thyme sprigs, toss with potato mixture until coated. Arrange in single later on baking sheet.

2. Bake 35-40 min or until potatoes are fork tender and lightly browned and shallots are caramelized, turning with spatula every 10-15 min. Garnish with thyme sprigs.
