Rosettes

Ingredients

  • 1 1/4 cups or light-colored beer
  • 1 egg
  • 1 cup flour
  • 2 teaspoons sugar
  • pinch of salt
  • oil for frying
  • powdered sugar

Preparation

Step 1

In a bowl, whisk together the water (or beer), egg, flour, sugar and salt, until smooth. Cover and refrigerate for at least one hour.

Heat at least 3 inches of oil to 375 degrees. Place the rosette iron in the oil to preheat. Lift the iron up and allow it to drip dry, then dip 2/3 of the iron into the batter. Do not dip it in further. Hold the iron over the fat for 10 seconds, then lower it into the oil and fry until the batter is golden brown, about 1 minute. gently remove the rosette with the help of a fork and drain on paper toweling. Repeat with all of the batter.

Dust the fried pastries with powdered sugar. Store in an air-tight tin in a cool, dry place, until ready to serve.
