SPICED APPLE BREAD PUDDING WITH BUTTERED RUM SAUCE

Ingredients

  • 1 loaf challah bread, cut into 1-inch cubes
  • 2 cups apples, peeled and thinly sliced
  • 2 1/3 cups whipping cream, divided
  • 2 cups whole milk
  • 1 cup granulated sugar
  • 1 stick butter, plus 4 Tbsp. melted butter
  • 4 eggs
  • 1 cup packed brown sugar
  • 1/3 cup dark rum
  • 1/2 tsp vanilla extract

Preparation

Step 1

Preheat the oven to 350 degrees F.
Combine bread cubes and apples in a large mixing bowl.
In a separate bowl, whisk together 1 ½ cups cream, milk, 1 cup granulated sugar, melted butter and eggs.
Pour cream mixture over bread and apples. Stir to combine and let sit for 10 to 15 minutes.
Spread bread mixture evenly in greased 13x9 inch baking dish. Cover with ½ cup cream and bake for 1 hour or until center of pudding is set.
While the pudding is in the oven, combine brown sugar and remaining butter in a medium saucepan and bring to a boil. Add the rum and remaining cream, reduce the heat, and simmer for 4 to 5 minutes, stirring constantly. Add vanilla extract.
Spoon hot buttered rum sauce over each serving of bread pudding just before serving.
