Ingredients

  • 300 g rice vermicelli noodles
  • 500 g lean pork or turkey mince
  • 6 spring onions, sliced
  • 3 carrots, cut into fine sticks
  • 300 g broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1/2 tsp chilli flakes
  • a few fresh mint leaves
  • 1 lime, cut into wedges, to serve

Preparation

Step 1

Put the noodles into a bowl, cover with boiling water and leave to soak for 8-10 minutes.

Meanwhile, stir-fry the mince in a large frying pan over medium heat for 5-6 minutes, until browned. Add the spring onions, carrots and broccoli and cook for 3-4 minutes more.

Add the soy sauce, fish sauce and chili flakes, drain the noodles and add them as well. Cook for 3 minutes. Serve in bowls, topped with mint and lime wedges for squeezing.
