Healthy stir-fry that is really quick and tastes great.
- 300 g rice vermicelli noodles
- 500 g lean pork or turkey mince
- 6 spring onions, sliced
- 3 carrots, cut into fine sticks
- 300 g broccoli florets
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1/2 tsp chilli flakes
- a few fresh mint leaves
- 1 lime, cut into wedges, to serve
Put the noodles into a bowl, cover with boiling water and leave to soak for 8-10 minutes.
Meanwhile, stir-fry the mince in a large frying pan over medium heat for 5-6 minutes, until browned. Add the spring onions, carrots and broccoli and cook for 3-4 minutes more.
Add the soy sauce, fish sauce and chili flakes, drain the noodles and add them as well. Cook for 3 minutes. Serve in bowls, topped with mint and lime wedges for squeezing.
