Feta and Spinach Dip

Can be used for fresh vegetables or baked pita chips or spread for sandwiches and wraps.

Ingredients

  • 4 C fresh spinach, chopped (about 2 oz)
  • 1/2 C light cream cheese
  • 1/2 C fat free sour cream
  • 1/4 C crumbled feta cheese
  • 1/4 C chives, fresh, minced, divided
  • 2 t fresh lemon juice
  • 1/4 t black pepper
  • 1/4 t salt

Preparation

Step 1

Place spinach in saucepan with 2 C water. Bring to boil over high heat and then cook for 1 minutes. Drain well.

Place spinach, cream cheese, sour cream, feta cheese, 2 T chives, lemon juice and pepper in blender and puree. Taste dip and add salt if desired. Spoon into bowl and sprinkle with remaining tablespoon of chives.
