Pork Chops - Mediterranean Pork Chops

Ingredients

  • 4 pork loin chops (about 3/4" thick)
  • 1/2 cup chicken broth
  • 1 tea. whole peppercorns
  • 2 Tbsp. balsamic vinegar, divided
  • 1 tea. soy sauce or teriyaki sauce
  • 1/2 tea. minced fresh rosemary
  • 1 tea. Dijon mustard

Preparation

Step 1

In a large zip-lock bag, combined chicken broth, peppercorns, 1 Tbsp. balsamic vinegar, soy saue and minced rosemary. Add pork; seal bag. Let marinate in fridge 30 minutes. Remove pork from bag; discard marinade.

Heat grill. In a small bowl, combine mustard and remaining vinegar. Grill pork 8 minutes, or until thermometer inserted in meat reads 165 degrees, brushing occasionally with mustard mixture and turning once.
