Heart Healthy Taco Casserole

Ingredients

  • 1 lb Ground Skinless Chicken Breast
  • 1/2 cup Chopped Onion
  • 1/2 cup Chopped Bell Pepper
  • 1 tsp Minced Garlic
  • 1 1/4 oz pkg Low Sodium Taco Seasoning Mix
  • 8 oz Taco Sauce
  • 8 oz Light Sour Cream
  • 1 cup Fat Free Cottage Cheese
  • 1 cup Crushed Low Fat Tortilla Chips
  • 1 cup Shredded Cheddar Cheese

Preparation

Step 1

Preheat oven to 400 degrees. Prepare 8 inch square baking dish with cooking spray and set aside. In large saucepan, cook chicken, onion, bell pepper and garlic until chicken is no longer pink. Stir in taco seasoning mix and taco sauce, then set aside. In medium bowl, combine sour cream and cottage cheese, then set aside. Place about half of crushed chips in prepared baking dish. Add chicken mixture to cover chips, then cover chicken mixture with sour cream mixture. Sprinkle with cheese and remaining crushed chips. Bake, uncovered, about 30 minutes, or until cheese has melted.
