- 2 sweet potatoes

- 1/2 tsp paprika

Preheat oven to 450 degrees and line 1 to 2 large baking sheets with parchment paper. Wash and peel the potatoes and then slice them into thin (think McDonalds) fry size pieces. Place potatoes in a bowl of cold water for 20 minutes then lay them on paper towels and pat them dry. Whisk the egg whites until they are light and foamy. Add remaining ingredients and whisk to combine. Toss half of the fries in the mixture then lift them out, give them a shake, and place them on the baking sheet. Make sure to give them space to bake. Repeat until all the fries are ready to bake. Bake them for 15 minutes, flip them over and bake an additional 15 minutes or until they are brown and crisp.
