Ingredients
- 1 stick(1/2 cup)unsalted butter,softened
- 1/2 teaspoon vanilla
- 1/4 cup superfine granulated sugar
- 1/8 teaspoon salt
- 3/4 cup flour
- 1/4 cup cornstarch
- 1/4 cup unsweetened Dutch processed cocoa

Step 1
Blend butter, sugar, vanilla, and salt in a bowl with a fork (or mixer) until combined well. Sift flour and cocoa into butter mixture and blend with a fork until mixture forms a soft dough.
Divide dough into two parts and transfer each to a sheet of waxed paper. Form into two logs, squared if desired, wrap in the waxed paper, put into a plastic bag and chill at least an hour.
Preheat oven to 325-350 . Slice log into ¼" cookies and place on ungreased or parchment covered cookie sheet, sprinkle with coarse sugar if desired, and bake 10-15 minutes checking from time to time to make sure they don’t burn .
Let cool 10 minutes on sheet and remove to rack to finish cooling.
