Ingredients
- 2 eggs, separated (reserve the whites for other use)
- 1 oz. Pecorino
- 1 oz. Parmigiano
- 2 oz. guanciale (substitute with unsmoked bacon if you cannot find it)
- 1 box dried spaghetti or other pasta
- Reserved pasta water
Preparation
Step 1
In a mixing bowl, combine the 2 egg yolks with both cheeses and whisk until completely combined. Cut the guanciale into matchstick-like pieces and cook on medium heat in a sauté pan. When crispy, slowly add to the mixing bowl. Cook your desired pasta in salted water the drain and add to mixing bowl. Stir pasta with sauce till thick. Add small amounts of the water from the pasta until you get desired thickness for the sauce
