Ingredients
- Dressing:
- 1/2 cup vegetable oil
- 1/4 cup vinegar
- 1/2 cup sugar
- 2 tsp. minced onion
- 1/2 tsp. salt
- dash paprika
- 8-10 cups bibb and leaf lettuce, torn into pieces
- 1 can (11oz.) mandarin oranges, drained
- 1 avocado, peeled, sliced and tossed lightly in lemon juice
- 1 can (3 oz.) French-fried onion rings
Preparation
Step 1
For Dressing: 6 hours or more before serving, put all ingredients into a blender. Blend well and refrigerate. Just before serving, blend again.
To assemble salad: In a large salad bowl, combine lettuce, mandarin oranges, avocado slices and onion rings. Toss lightly with dressing and serve.
