Corn Relish Dip

Cool, creamy, spicy and tangy...great with corn chips or crudites. Make ahead and chill for flavors to meld.

Ingredients
- 2 C frozen corn (I use extra sweet Niblets)
- 1 8oz. pkg. of cream cheese
- 4 T sour cream
- 2 T mayonnaise
- 1/4 C chopped red bell pepper
- 1/4 C chopped green onion
- 3 T chopped cilantro
- 2- 4 t finely minced fresh jalapeño….more if you like it hotter.
- 3 T fresh lime juice

Step 1
Cook corn in a covered microwave dish with no added liquid 4-5 minutes. Drain and mash gently with a fork and set aside. In a mixing bowl or food processor, combine cream cheese, mayo, sour cream and lime juice until smooth. By hand, stir in remaining ingredients including cooled corn. Chill 2 hours for flavors to blend. Serve with raw vegetables, corn chips or crackers.
***Reduced fat or lite sour cream, cream cheese and mayo may be used. After it has chilled, taste and add more jalapeño, lime or cilantro to suit your taste. The heat from the peppers increases over time.
