Ingredients
- 1 t. vegetable oil
- 1 small onion, chopped 2-3 cloves garlic, peeled and chopped
- 3/4 c. quinoa
- 1 1/2 cups vegetable broth or chicken broth
- 1 t. ground cumin
- 1/4 t. cayenne pepper
- Salt and pepper to taste
- 1 cup frozen corn kernels
- 1 15oz can black beans, rinsed and drained
- 1/4 cup, or less, chopped fresh cilantro
- 1 cup fresh spinach

Preparation
Step 1
Heat the oil, add onions and garlic. Saute until slightly browned.
Add quinoa and vegetable broth. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to boil, cover and simmer for 20 minutes.
Stir frozen corn and spinach into mix and heat an additional 5 minutes. Mix in the black beans and cilantro.
If making burritos, place mixtue down center of burrito, add grated mexican cheese and a tablespoon of prepared salsa. Roll up in envelope style. You can freeze at this point or heat for 15 minutes in a 400" oven
