Ingredients

  • 908 g Potatoes peeled and cut into chips
  • Fry Light
  • Salt & Freshly Ground Pepper
  • 4 x 142g Skinless Cod Fillets
  • 1 tsp English Mustard Powder
  • A small had full of Fresh flat-leaf parsley chopped
  • 227 g frozen peas
  • 1 Lemon, cut into wedges

Preparation

Step 1

Preheat your oven to 220 oC / 450 oF / Gas 7.
Boil the potato chips for 7-8 minutes.
Drain & transfer chips to a baking tray, spray with fry light and season well.
Place on top shelf of the oven and bake for 20-25 minutes, or until the chips are cooked and golden.

Meanwhile, place the fish on a foil-lined baking tray. Mix the mustard powder and parsley with some seasoning and use to coat the fish. Place the fish in the oven below the chips for the final 10-15 minutes of cooking time, or until cooked through.

Boil the peas and drain. Serve the chips with the peas and some lemon wedges on the side for squeezing over.
