Fudgy Mocha-Toffee Brownies

Best Bar Cookie. These gooey bars are as rich as anything you'll find in a bakery. They are a welcome treat in a lunch box, as a weeknight dessert, or any time you need a sweet treat. --Recipe by Kathleen Kanen (January/February 2005)
Ingredients
- Cooking spray
- 2 tablespoons instant coffee granules
- 1/4 cup hot water
- 1/4 cup butter
- 1/4 cup semi-sweet chocolate chips
- 1 1/2 cups all-purpose flour (about 6 3/4 ounces)
- 1 1/3 cups sugar
- 1/2 cup unsweetened cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup toffee chips
Preparation
Step 1
Preheat oven to 350°.
Coat bottom of a 9-inch square baking pan with cooking spray.
Combine coffee granules and 1/4 cup hot water, stirring until the coffee granules dissolve.
Combine butter and semisweet chocolate chips in a small microwave-safe bowl. Microwave at HIGH for 1 minute or until butter melts; stir until chocolate is smooth.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, sugar, unsweetened cocoa, baking powder, and salt in a large bowl, stirring with a whisk. Combine coffee mixture, butter mixture, vanilla extract, and eggs in a medium bowl, stirring with a whisk. Add coffee mixture to flour mixture; stir just until combined. Spread evenly into prepared pan. Sprinkle evenly with toffee chips. Bake at 350° for 22 minutes. Cool on a wire rack.

Hands-down favorite brownie recipe ever! I can't imagine how anyone could make these and have them turn out dry. Maybe too much flour and over-baking? I've made them at least a dozen times, and they've never been anything but fudgey, moist, and full of naughty coffee/toffee goodness. Every member of my family (the kid included) asks for these all the time. They're also delicious frozen, chunked, and served on ice cream. I'd give these six stars if I could!
Great recipe. Helpful hints: 1. Do not overbake. 2. Do not attempt to double or triple the recipe unless you have a good arm for mixing. 3. If you decide to triple the recipe, it will bake nicely in a jelly roll pan. I have been using this recipe since it's debut in 2005. Family and friends LOVE it. Happy baking.
Amazing! These are probably one of the best items to come out of my oven, and I bake a decent amount. Highly recommend for a party or gathering, because otherwise it would be pretty easy to eat the whole bunch. For those who are keeping an eye on their diet, a single serving isn't too bad for you, either!
Has anyone used Kahlua instead of the water and instant coffee?
I over-baked these a tad, and they were still wonderful! A word to the wise. Don't make these brownies if you're alone and depressed.
These turned out great. Just the perfect hint of coffee flavor. They came out very fudgy and stayed that way for a couple days. I cooked for only about 3 minutes longer than the recipe called for.
These brownies are scrumptious! I've made them a couple of times without any changes to the recipe. They're rich and gooey, not dry at all. I served them with a scoop of ice cream, and a dollop of fudge to guests, but they're just as good plain (there's nothing "plain" about them). I'm amazed by the varying reviews. This recipe is a keeper for me!
I find these brownies to be DELICIOUS, especially for coffee lovers. I have made them many times (with no changes to the recipe) and have never had any problem with their being dry or hard. Yes, the batter is stiff, almost like a dough; but the brownies bake up moist and gooey! Could it be that those who found them dry and/or hard overcooked them? That's so easy to do with brownies. Might be a nice treat for your Valentine!
These are very good for a light brownie recipe, but I wouldn't make them for company.
I like mocha but having a coffee taste in a brownie just didn't do it for me. The consistency is fine, but the flavor is as my husband put it - 'nasty'.
I didn't change anything in the recipe, and my brownies came out with a more cake-like texture than normal brownies. The toffee needs to be increased in order to even taste it. This was not my favorite and the coffee taste was a distraction, not a bonus.
SOOO Dry!!! I don't understand how some people got moist brownies with this recipe. There is no moisture!

Made it tonight and was really good. Used Extra-Dark chocolate in the batter instead of chocolate chips. On top also added some chocolate chips. I had to add 2 tbsp of water to the batter because it was too dry. I baked for only 20 minutes. I really liked it and will make this dessert again. Even my boys said that it was really good even if it was low fat.
This recipe is awesome; my only regret was that I didn't make more!!!!
As written, this batter was too dry to even finish mixing. I added between 1/4 - 1/2 cup of milk. I didn't add any toffee bits. Then, I baked the batter in mini muffin tins and made a PB frosting to top them with, and let me tell you, YUM! The coffee flavor comes through very well and we loved them!
The batter was thick and a bit difficult to stir, but my brownies turned out really moist. I wonder if the people who got dry brownies didn't weigh their flour. The coffee flavor was good at first, but got stronger if you ate more than one. So I plan to try less coffee next time. I took these in for an office party and they went pretty fast - lots of positive reviews.
I'm a younger cook, so I often look for easier recipes and ones I can incorporate a little fun into! I split the butter in half with applesauce to cut out some extra calories and added sugar-free toffee candies from Weight Watchers on top! They turned out very moist and delicious! I am a coffee lover though so that's what made it for me, I usually don't enjoy brownies!
